As a college student with a limited knowledge of cooking I find myself in constant search of the perfect pizza. No matter where you are in the world pizza brings a little slice of comfort and almost never lets you down. I have had my fair share of decent pizza pies but sometimes one pie comes along and changes everything. A little over a year ago my search for the perfect pizza took me to Idaho Springs in Colorado, home of Beau Jo’s. What sets Beau Jo’s a part is the legendary mountain pie. The mountain pie is famous for being Colorado style pizza and this style gets its name from the beautiful  mountain of ingredients that grace the pizza dough. These mountain pies are priced based on weight but the heavier it is, the more there is to love!

Now of course you are all excited about the mountain of ingredients I just mentioned but any true pizza enthusiast knows that the true magic lies in the pizza crust. At Beau Jo’s honey is used as a natural sweetener rather than using sugar for the dough. You also have a choice of requesting whole wheat dough that is made with olive oil and rocky mountain honey. If you have any crust left over after you devour your mountain pie you can pick up a bottle of honey on the table and turn the leftover crust  into a sweet dessert.

The mountain pie and the magical crust is no secret to the outside world. In fact, the restaurant has been featured on the Travel Channel due its unique food challenge. The challenge is that you and a partner have one hour to take on Beau Jo’s 14er pizza . This pizza is not 14 inches but rather it is 14 POUNDS worth of pizza. Clearly, this challenge is not for the faint of heart. When Beau Jo’s isn’t challenging the masses with its impressive pizza it is taking the time to work towards a sustainable environment.

Beau Jo’s commitment to the environment has them using wind power provided by Xcel Energy‘s Windsource program along with investing in solar panels and geothermal heating and air conditioning. Along with their commitment to the environment they have a commitment to their customer’s health. I know pizza and health are not typically used in the same sentence but at Beau Jo’s they offer menu items that serve those with dietary restrictions. The nutrition and allergen guide tell you what to look out for and the gluten free options gives the customer a ton of choices. Go forth my fellow pizza enthusiasts! Be fruitful and eat lots of pizza!
